Practical training :
• The advanced basics of Health Cuisine® : seasonings (broths, vinaigrettes, emulsified sauces), thickenings, working with meat and fish, healthy cooking methods, sous vide cuisine, advanced substitution methods, etc.
• 45 seasonal recipes of advanced level inspired from Michel Guérard’s Michelin-starred cuisine.
Sample recipes : pea soup and truffle cloud, delicate scampi on frothy potatoes, mushroom Parmentier in chaud-froid, traditional stuffed cabbage, guilt-free cassoulet, grilled tuna and vegetable ribbons, warm tomato tart, spring risotto with prawns.
Public : experimented chefs working in gastronomic restaurants
