• The advanced basics of Health Cuisine® : seasonings (broths, vinaigrettes, emulsified sauces), thickenings, working with meat and fish, healthy cooking methods, sous vide cuisine, advanced substitution methods, etc.
• 75 seasonal recipes of basic, intermediary and advanced level.
• The basics of Health Pastry® : using sugars, whisked egg-whites, gelatin, bavaroise-based recipes, crème anglaise, Chantilly, etc.
• 25 contemporary and great classic recipes

• Cuisine : orange-flavoured carrot terrine, tomato gazpacho, fillet of beef béarnaise, duck hamburger, vegetables au gratin, lemongrass loin of pork, salad bouchère, stuffed chicken breast, brandade of cod, beef salad, thin tart of mushrooms, crab cannelloni, Champvallon lamb, “guilt-free” cassoulet.
