Practical training :
• The basics of Health Pastry® : using sugars, whisked egg-whites, gelatine, bavaroise-based recipes, crème anglaise, Chantilly, etc.
• 20 contemporary and great classic recipes of basic and intermediary levels
Sample recipes : verbena semolina, raspberry clafoutis, redcurrant jelly, coffee cream, floating island, crêpe suzette, tiramisu, panna cotta, chocolate cake, strawberry sorbet, lemon tart, profiterole, Paris-Brest, lime and apple soufflé.
This session is also offered in advanced level. It will be organized from 20th to 21th October 2016.
